Learn the Creole classic hands-on with our chef. We start at the market stall, pick the salt cod, then debone, flake and season it into the family-recipe batter — chives, garlic, scotch bonnet, lime. You fry your own accras in small batches, taste them straight from the oil with a squeeze of lime, and leave with the recipe card and a starter kit of Creole spice.

The Saturday-afternoon ritual of every Caribbean village, run in our garden. Whole snapper straight from the Anguilla channel, scored, marinated in green seasoning and lime, then fried golden and crisp in cast iron. You learn the cut, the marinade timing, and the temperature tricks that keep the flesh moist. Served with johnny cakes, plantain, and a rum punch on the terrace.
